INGREDIENTS for Bhaji
Green chili                                                 7-8
Spinach leaves                                         18-20

Cauliflower                                               1 cup
Potatoes                                                     3-4
Pav bhaji masala                                     1 Tbsp
Capsicum                                                   1
Carrot                                                          1
Cabbage                                                      1 cup
Beans                                                          1 cup
Ginger garlic paste                                 1 Tbsp
Salt                                                              To taste
Coriander                                                   1/2 cup
Oil                                                                 2-3 Tbsp
Cumin seeds                                              1 Tsp
Onion                                                           1 big
PROCEDURE
Clean and chop the veggies…Potato, Cauliflower, Carrot, Beans into small pieces and parboil it. Also boil spinach leaves, and make paste of spinach along with
green chilies, keep aside. Chop cabbage and capsicum in small pieces and keep aside. Heat butter or oil in a pan. Add cumin seeds, when it sizzles, add ginger
garlic paste. Saute for a minute add finely chopped onion, saute till transparent. Then add chopped tomatoes, fry for a while. Add chopped cabbage, capsicum and
salt. Saute it well for 5 min. Add boiled veggies, spinach+green chili paste, it gives green color to our bhaji. Add pav bhaji masala and chopped coriander leaves.
Mix everything well. Add little water to get desired consistency and allow it to a boil, till the everything is blend well.
For pav
Slit pav buns into halves. Spread butter generously on it both the sides. Toast the buns on hot pan, also sprinkle some chopped coriander leaves while toasting so
that coriander coated on pav. With coriander the buns taste different and more tasty. Serve hot Green khada pav bhaji with dollops of butter, sprinkle some chopped
tomato, onion and coriander on it, along-with lemon wedges.
