GREEN EGG CURRY
This is a delicious EGG CURRY which is cooked in green masala, It is vibrant colored curry.

Its a fairly simple recipe. Its perfect for a refreshing lunch or brunch with side of chapati and rice.

INGREDIENTS
EGGS                                                                      6
ONION                                                                   1 Big
TURMERIC powder                                          1/2 Tsp
GARAM MASALA                                              1 Tsp
CORIANDER leaves                                          A bunch
GREEN CHILIES                                               8-10
GINGER                                                               1 inch piece
GARLIC                                                               8-10 Cloves
OIL                                                                       3-4 Tbsp
LEMON juice                                                    1/2 Tsp
MINT leaves                                                     10-15
SALT                                                                    As per taste
TENDER COCONUT                                        1/2 cup  grated
CUMIN powder                                                1/2 Tsp
PROCEDURE
Boil the eggs, Shell them and keep aside.

 

Grind onion, green chilies, ginger and garlic, keep aside.

 

Also grind Mint, coriander and tender coconut.. prepare smooth paste and keep aside.

 

Heat a pan pour oil init. Add smooth paste of coconut in it.

Saute it for 5 min. on medium flame.

Add onion paste and again stir for 2 min.

Add salt, garam masala, cumin powder and turmeric…. give a nice stir.

 

Add required water (appr. 1 1/2 glass of) and allow it to boil.

Gently drop boiled eggs in green curry, give a gentle stir.

Cover the pan and cook for 2 min. on low flame.
